Norwegian Sponge Cake

This is one of the world’s most famous cakes. A classic Swedish princess cake is wrapped in green marzipan, and garnished with a pink marzipan rose and leaf, dusted with powder sugar.
Firstly, you need to make the base: the Norwegian Sponge Cake. When cooled, the layers must be trimmed.
You Will Need
  • 1 Norwegian sponge cake recipe
  • 200-gram raspberry jam (good quality)
  • 1 pastry cream recipe

  • 450 ml whipped cream, lightly sweetened if preferred
  • 500-gram White Marzipan
  • Green, yellow, and pink food coloring
Now it's time to make the pastry cream.
Add a generous amount of the raspberry jam on the first sponge layer. Place the second sponge layer on top of it.

Add a generous amount of pastry cream. Don't spread the cream onto the edge of the cake because it can make the marzipan sweat. Spread the whipped cream on top into a dome shape. Bend the last layer into the same dome shape.
Now it's time to make the marzipan to cover the cake.

Green Marzipan

Now it's time to make the marzipan to cover the cake.
Lift marzipan and cover the entire cake, smoothing the sides down.
Trim excess marzipan from the base, and lightly dust the cake with powdered sugar.

Attach rose and leaves with water on top of the cake. and Enjoy!
